Document your processes in 30 days without stopping work
You don't need a manual. You need ten processes described well enough for someone else to run them.

Documentation fails when it becomes a project. It works when it's a side effect - you describe the process while doing it, not afterwards.
The method
- Pick the ten tasks that repeat most often.
- Next time someone does one, record the screen and narrate out loud.
- Turn the recording into a step list - not an essay.
- Have a second person run the list and fix what's missing.
What not to document
Anything that will change within three months. Anything done once a year. Anything that depends on judgement - there you need a principle, not steps.
A process is finished when a new person can run it without asking you anything.
